Behold! The first recipe post to my site! Weird. I thought I had posted others and...I have not. So this is the first and not the last. I have plenty to share from baking to grilling to cocktailing, all coming in the near future...enjoy. Lemon Ladyfingers are lemon bars with a fancy name. My mom has always been the master at baking these so I've made a change or two to her recipe to try and not be a complete copycat, and get as much lemony goodness as possible out of these babies.
Here's what you need:
1 cup flour
1/2 cup softened butter
1/4 cup sugar
2T lemon juice
1 fresh squeezed lemon
1/4 tsp lemon extract
1/2tsp baking powder
These are so very easy to make. Start with your crust. Mix those ingredients together until it's like a crumble. Then press into a lightly greased 9x9 pan. Bake at 350 for 15 min. Then allow to cool.
While your crust is going you can work on the filling. Beat two eggs with a fork. Then add the rest of your ingredients. Taste your batter. I play around to make it more lemony or sweeter. The way your batter tastes is a strong indication of how your bars will taste.
Pour batter over cooled crust and then it's back in the oven at 350 for 25 min. Bars should be slightly golden brown on top when you pull them out. Once cooled, sprinkle with powdered sugar and you're good to go!
