I titled this entry as such because after my husband had one bite of my grilled salmon he said "yep, you can do it." I said, "do what?" Him, "Beat Bobby Flay". 😂😂😂 Weeeell I dunno about all of that, but I do know that I can grill some fish. And today I'll be sharing the simplicity of that with you, as well as some easy side dishes that pack some punch! Garlic Parmesan Mashed Potatoes and Cheesy Broccoli. First up. The fish. Grilling salmon is my favorite. It cooks just right every time, and very quickly! I hate when salmon is mushy in the center. I want in cooked all the way through, and I always achieve that when I grill. So here's what you need:
Salmon Filets (preferably skinless)
That's it folks. Heat your grill upto high heat. Prepare the filets by removing the skin (if there is any). Season both sides to taste with salt and pepper and then slap them on that grill! 4 minutes each side. You should get a nice little charring, but no burning. That's it. Pull them off and they are ready for serving or you can make a nice little sauce if you like. I whisk together a little white wine, heavy whipping cream and butter and season with a little salt, pepper and parsley.
On to the sides. Garlic Parmesan Mashed Potatoes up first! I make my sides to serve 2. Here's what you need.4 large Potatoes peeled and halved
1/2 cup melted butter
5 cloves garlic (chopped)
Boil the potatoes in salted water until soft. Drain water and then mash with potato masher. Add in warm butter and whipping cream and stir well. Add all of the rest to taste and then stir and serve. Makes about 3 servings (I like a little extra, hubby usually goes for seconds)
And for the broccoli. Packaged works just fine. Boil with salted water and then strain. Add a packet of melted Velveta cheese and stir. Ready to serve!
And now you have a complete dinner ready in less than an hour! Unless, you drink your wine and stall around like I do 😁 That's part of the fun in cooking though I think. Taking your time and enjoying the process.
Now you're ready to beat Bobby Flay! Or at least you can watch that show and pretend you can kick his butt on the grill. Bobby is the grill master though. So let's not get too cocky...yet. 😉
