This is my favorite healthy dessert I've ever made. It's basically the bomb. And super appropriate for your American holidays and parties! It has a little bit of a kick to it too! A little vodka for those who love it...and if not it's very easily omitted! This also was my first time baking an angel food cake and..it's weird, isn't it? Cooling it upside down on a glass bottle? I used a beer bottle and I thought the heat was going to make it explode but, thankfully, it did not! It also rises SO HIGH in the oven, so make sure to put it on the bottom rack and remove your upper racks so it can rise and fall on its own. Looks absolutely beautiful and crisp on top when it's all done.
All right! Let's get down to it!
- Betty Crocker Angel Food Cake Mix
- 1/4 cup water
- 1/4 cup sugar
- 1 cup blueberries
- 1 cup strawberries
- 1/4 cup simple syrup
- 1/2 cup Van Gogh Blueberry Acai Vodka
Start with the Angel food cake. Prepare the mix EXACTLY as it says on the box. Pay attention to your times and make sure you remove those racks where required!
While that is baking (about 35-40 min) soak the blueberries in half of the simple syrup and all of the blueberry vodka. Then chop your strawberries and place them in a small bowl and drizzle with the rest of the simple syrup.
Whip the heavy cream in a stand mixer on medium speed. Fold in the cooled water and sugar mixture and beat on high for about a minute. Set aside. This cream will thicken up some on its own.
When your cake is completely cool, crumble up the angel food cake. Layer your parfaits starting with a layer of cake crumbles. Next spoon the blueberries on top, then spoon some of the cream on. Add a layer of strawberries another layer of cream and top with a few strawberries and blueberries.
You should be able to fill 6-8 parfait glasses depending on size and how much you're spooning into each glass.
These are super delicious guys. I'm not just whistling Dixie! You will love them. And you will feel satisfied after eating them. It's all very natural ingredients so you don't have to worry about too much fat.
It's also a very pretty dish to present. The red white and blue colors are so festive. Your friends and family will love them and the attention to detail. Nothing like eating something that not only looks great, but tastes fantastic too! Also, super kid friendly! 👍🏽
